Tonights dinner - easy and yum! Works as a side dish to your protein, or can stand alone for your main dish.
You wll need:
~2/3c Quinoa
~1 pint cherry or grape tomatoes
~2 cucumbers
~1 bottle of italian dressing *read the ingredients list carefully for allergens!
~Mrs. Dash (optional)
~Fresh grated parmesean cheese (optional)
Ahead of time:
~I made 2/3c of quinoa in my rice cooker with 1-2/3c of water
~Once it was done, I put it in a bowl to chill in the fridge
About half an hour before dinner, chop:
~washed cherry or grape tomatoes in half
~washed cucumbers in quarters, then in chunks
Last:
~toss qunioa, tomatoes, and cucumbers in a bowl and add 1/2-2/3 of the bottle of italian dressing, depending on how dry you want your salad.
~Store tightly covered in the fridge for up to 2 days.
When you are ready to serve:
~garnish with a sprinkle of Mrs. Dash and/or
~a few pinches of grated parm
YUM!
Allergy notes: always read your ingredient labels carefully, but my italian dressing, Mrs. Dash and parmesean cheese were gluten free!

GF Coupons and New Finds!
If you follow me on Facebook, you've seen these updates - but I wanted to put them on the blog too, now that I am back on a computer and not posting from my phone!
~Popcorn, Indiana and Crunchmaster are available at Sam's Club near me in Minnesota! Check out your bulk warehouse store next time you are there and see what GF goodies might be hiding on the shelves...
~Annie's products were on sale this week at Target - on a whim, I checked for GF Annie's products and found some! Mine carries 2 varieties of GF bunny crackers and 2 varieties of GF mac and cheese.
~Target also has a printable Target coupon available for $.50/2 on their website - you should be able to print two - and they also a $.75/2 mobile coupon. Score!

7/22/2012 GF Coupons
There were 2 coupons in particular today that caught my eye!
~Blue Diamond Nut Thins $.75/2, SS 7/22 Exp. 9/30/12 - especially if you have a store that has a "Double Coupon Day," you may snag a really good deal on these crackers. While clearly these are not free of carbs, we must have some carb in our diet - and they are certainly more healthy in my book than the potato chips I crave... With doubled cupons, I should be able to pick these up for about $2.24/box
~SoyJoy $1/1 5-pack SS 7/22 Exp. 8/31/12 - I have never tried these, but I love shelf stable GF items! I am always searching for GF items to have for an on-the-go breakfast or snack as well, so I will likely try these. Below the coupon is an ad from Cub, advertising their sale on this product for 2/$6. Use this coupon to get these down to $2/box, and reportedly their Facebook page has a B2G1Free coupon you could use as well - in theory you could wind up paying $4 for 3 boxes (15 bars, or $.27/bar) if you have the Facebook coupon and two coupons from the newspaper.
