My Story

In March of 2000, I was diagnosed as an insulin dependant diabetic (Type 1, often called Juvenile Diabetes - except I was almost 16!)

I was on multiple daily injections until December 2008, when I got a Medtronic insulin pump. I big puffy heart my pump!! It saw me through a pregnancy with my son in 2009, and I recently upgraded to the Revel - partly for the new technology, mainly because it is pink... :)

In January of 2012, I started the journey that I would come to understand was Celiac. I started to have odd breakouts on my back and scalp - off and on. I had my endocrinologist test my thyroid in April - normal.

In June of 2012, I started having what I believed to be "oral allergy syndrome" and reacted to raspberry, pineapple, banana, Baby Ruth bars, and Food Club (generic) club crackers. It seems that some of them may be related to my latex allergy? Who knew?! There is a whole list of foods I am more likely to be allergic to because of my latex allergy.

Like wheat. So I started paying attenting to how I felt when I ate wheat - and I felt like garbage. Thinking it may be an odd coincidence, I asked my endocrinolgist for a Celiac blood panel test. That came back as a "weak positive" for antibodies that could suggest Celiac, and I was referred for an endoscopy and biopsy of the small intestine. The endoscopy showed ridges, and the biospy showed damage, confirming Sprue (Celiac.)

So, here I am! Being both a diabetic and now with Celiac, I have to be both low carb and gluten free - and I am on a budget, and a mission to be healthy. Join me in my adventures to eat good food without losing taste, without taking out a second mortgage, and without compromising my health! Cheers!
